Arroz con Dulce

minutesArroz con dulce is a traditional dish in Puerto Rico. It’s mostly a Christmas season dish, one that you’ll find in every household.
Ingredients
1 1/2 Cups of Medium Grain Rice
6 Whole Cloves
1 inch piece of fresh ginger, peeled
1 Cinnamon Stick
1 tsp Salt
1 can (15.5 oz) of Cream of Coconut (not to be confused with Coconut Milk)
Directions
- In a medium bowl, add rice and enough cold water to cover. Let rice soak between 30 minutes to 1 hour. Drain and set aside.
- In a medium saucepan over high heat, bring to a boil 3 cups of fresh water, salt, cinnamon stick, cloves, and the ginger. Lower the heat to medium low and simmer for 10 minutes. Remove and discard all spices (cinnamon stick, ginger and cloves). Reserve the water in the saucepan.
- Add the cream of coconut to the spiced infused water and bring it to a boil. Add rice and lower heat to a medium low temp. Covered the rice until soft and all liquid has been absorbed, typically 20-30 minutes. Stir occasionally.
- Transfer the “arroz con dulce” to a large casserole and place it in the refrigerator to cool for 20 minutes.
- Serve and enjoy!
Notes
- For more flavor you can add 1/2 cup of raisins
